Beef Brisket: One Tough Customer



Provence. The eyes pop and the mouth waters. Make no mistake about it, Provence is not considered one of France's fine wine regions. But there are exceptions, Bandol AOC is often considered a fine appellation, especially the red. The annual production is about 5 million bottles on 2700 acres (1100 hectares). The major grape is Mourvedre that the Romans first cultivated some 2500 years ago. This particular wine comes from a hillside vineyard with very deep gravelly soil and only organic fertilizer. You can read about the producer in the marketing materials below. This is our second Bandol review. After two years I just couldn't wait to try another one.

I remember the first time I had the pleasure of eating you tube beef brisket in crock pot. It was at this fabulous little Barbecue Restaurant in Croton-On-Hudson, NY called Memphis Maes.

How do you know you are ungrounded and uncentered? One of the easiest indications is how easy it is for you to focus on a task. If you find that your mind wanders and you get sidetracked easily, there is a good possibility you are ungrounded. However, having a lot on your mind, juggling many tasks at one time, focusing for long periods, or travelling can all knock you off center.

Have a cheap meal day once a week: Once every week try and cook a meal for you and your family for under $10. Whether it is cheap meat and a stew in the slow cooking brisket, or a cheap pasta dish, it will do wonders do your budget. If you are really trying to save money go for two cheap days a week.

We eat with our eyes, as the saying goes, and slow cooking can fade the colors in an otherwise colorful recipe. Add some brightly colored garnishes near the end of the cooking time or after serving the dish to brighten it up.

With both parents out working all day, it can be difficult to make good quality meals. If mom and dad both get home at five or six in the evening, after a long day at work, the thought of having to make dinner from scratch can be a daunting one. This is one of the main reasons that crockpot cooking is taking off again in a big way. Throwing some ingredients into the crockpot in the morning and leaving the beef brisket food network to cook to perfection by itself is very tempting.

At the first sips these fermented grapes were sweet and harsh. I tasted some plums. The initial meal featured slow cooking beef. The new liquid offered expressive but not excessive acidity and not a lot of fruit. When paired with the accompanying potatoes our Abruzzi friend's acidity soured, dominating everything. The other side dish was leeks sauted in olive oil. In response this wine mellowed and I got a burnt taste in the background. Then I doused the meat with Louisiana hot sauce. But the wine remained raw.

My final meal began with tomatoey barbecued chicken wings. This Primitivo was round and mouthfilling. I had the impression that the wine melted into the wings. Next was barbecued chicken breast in an almost identical sauce. My reaction was basically the same but the wine became more acidic and I tasted tobacco as well. The side dish was one that I really enjoy, potatoes roasted in chicken fat. Now plums came to the fore. A fresh tomato didn't faze the Primitivo at all; the wine was acidic, musky, and tasty. Although this is not a dessert wine, I paired it with two desserts. In the face of delicate almond meringue cookies the wine was not very expressive; it was round, light, and tasted of cherries. When it met fruit juice candy the wine was quiet, perhaps because it was overwhelmed.

If you need your stew to thicken you may use a few of the all reason flour and place three tbsp inside a bowl. Add a cup of drinking water and stir to sort a paste. Pour this paste into the gradual cooker.
